The inspiration for this sandwich came from a course I recently completed at Algonquin College in, ‘Tea Pairing & Menu Design.’ The smoked trout is a lovely and tasty alternative to smoked salmon that is typically served at Afternoon Tea. The wasabi and Dijon mustard paste adds a zing to contrast the smokiness of the fish.
Yields: 4 finger Afternoon Tea Sandwiches
Tea Pairing: Darjeeling
(2nd flush)
What you Need:
2 slices of Smoked trout
2 slices of Dark rye bread
1.5 tbsp. Cream cheese
1/3 cup of Arugula
1 tsp. Maille Dijon Mustard
1 tsp. Wasabi paste
How to Make it Happen:
1. Combine Dijon mustard and wasabi
in a separate container until they are well blended.
2. On one side of the dark rye
bread, spread a thin layer of cream cheese and place two slices of smoked trout
on top.
3. Spread the wasabi and Dijon
mustard paste on the second slice of bread and top with arugula as desired. Cut
into four equal vertical pieces to create ‘finger sandwiches’ for Afternoon
Tea.
