Avocado & Steak Salad
I love the buttery texture of the cold avocado with the grilled steak and crunchy vegetables. The marriage of different colours and textures are wonderful in this salad.
What you need:
1, 3-6 oz lean cut steak (Sirloin or Flank)
2 cups of mixed greens
2 sweet peppers, roughly chopped
6-8 cherry tomatoes, sliced
1/3 cucumber, sliced
1 half avocado, sliced
2-3 tbsp extra virgin olive oil
3 tsp. balsamic vinegar
1 tsp. coarse sea salt
2 tsp. fresh ground black pepper
1 tsp. sesame seeds
How to make it happen:
1. Sprinkle coarse sea salt and fresh ground pepper on both sides of the uncooked steak. Pour one teaspoon of extra virgin olive oil into a cast iron pan and let the pan heat until the oil starts to smoke. Ensure the meat is dry (wipe with a paper towel) before placing the steak into a cast iron pan and cook to desired temperature.
2. Once cooked, let the meat rest before slicing.
3. Slice half of an avocado and set aside.
4. Chop up sweet peppers, cherry tomatoes and cucumber, adding them to a plate of prepared mixed
greens.
5. Once the steak is cooled, slice into strips and arrange on top of the mixed greens, alternating the sliced steak pieces with slices of avocado. 6. Combine the extra virgin olive oil and balsamic vinegar together and pour on top of the mixed greens. Sprinkle sesame seeds on top of the salad as a final touch.
