Cheese & Bacon Perogies



This is a great recipe for making a quick and easy meal. I just love the gooeyness of the cheese, the bite of the scallions and the saltiness of the bacon. A winning combination!

What you need:

1 pkg of frozen perogies
4-5 slices of hickory/maple smoked bacon
2 green scallions
1/3 cup shredded cheddar cheese
1 white onion- sliced and diced
3 tbsp extra virgin olive oil
Salt and pepper to taste

How to make it happen:


Bring a pot of cold water to boil and add frozen perogies. Suggested serving is 5-7 perogies per person (Depending on hunger).

While the perogies are boiling, sauté the white onions in a frying pan with olive oil until they are translucent.

In a separate frying pan cook the hickory smoked bacon until it is crisp and golden. Once it is cooked, set aside to cool.

Boil perogies for 5-7 minutes. Once cooked, drain the perogies and add them to the sautéed onions. Continue to cook until they are golden in colour.

Next, place the perogies on a plate with the cooked white onions. Roughly chop the bacon into thick pieces and cover the perogies.

Finally, slice green scallions diagonally and add scallions and shredded cheese to the perogies and bacon.
