Quick & Easy Christmas Strudel


What you Need:

5 Phyllo Sheets
1/4 cup unsalted melted butter
1/4 cup chopped walnuts
3/4 cup left over Christmas Plum Pudding
1/2 apple
1/2 pear
1 tbsp. turbinado sugar

How to Make it Happen:

1. Preheat oven to 350 degrees and prepare a baking sheet with parchment paper. 

2. In a separate bowl, use a cheese grater to shred half of an apple and pear and set aside.

3. Next, line your counter surface with parchment paper or aluminum foil. Take a single phyllo sheet and lay it flat onto your work surface; the longer side should align with the edge of the counter's surface. Use a brush to spread a thin layer of melted butter on top of the pastry sheet and sprinkle a handful of chopped walnuts onto the phyllo.

4. Take the second phyllo sheet and place it on top of the first. Spread another thin layer of melted butter on top of the pastry and repeat with an additional layer of chopped walnuts.


5. Place another phyllo sheet on top of the second, spreading a layer of melted butter. Next add the shredded apple and pear on top. (Note: Ensure to cover the unused phyllo sheets with a cloth to keep them from drying out).

6. Place a fourth and fifth phyllo sheet on top of the apple and pear layer. Ensure each sheet is spread with melted butter in order to hold up to the moisture of the fruit.

7. Place the left over Christmas pudding along the short side of the fifth phyllo sheet, vertically. Ensure to leave one inch of space around all three sides of the phyllo. Fold the edges of the sides over, ensuring the filling stays in place. Make sure to brush the phyllo with melted butter after each fold.

8. Fold the end of the pastry sheet on top of the strudel and ensure to brush with the remaining melted butter to seal the pastry together. Sprinkle a pinch of turbinado sugar and the remaining walnuts on top of the strudel as desired.

9. Bake the strudel at 350 degrees for 25-30 minutes or until golden brown.
