Green Eggs & Ham





 Green Eggs & Ham

This recipe is dedicated to my friend Gisell who introduced me to the true wonders of avocado. The soft and buttery taste of the avocado complements the crunchy, saltiness of the bacon for a winning combination.

What you Need:

1 Avocado
2 Boiled eggs
Juice of ½ lime
1 tsp. Coarse salt
1 tsp. Ground pepper
Hickory smoked or Maple flavoured bacon

How to make it Happen:

Bring a pot of cold water to boil and cook the eggs for 7-10 minutes.

In a separate frying pan cook the bacon until it is crisp and golden. Once it is cooked, set it aside to cool. 

Next, peel the avocado and slice it into a separate bowl. Add coarse salt, ground pepper and fresh lime juice into the mixture.

Once the eggs are boiled and cooled, remove them from the shell. Slice the eggs and add them to the avocado mixture, stirring until the eggs and avocado are combined. 

 Finally, plate the mixture and add the sliced bacon. Suggested serving: 2
